
SERVES: 4
- 2 1/2 cups shredded cooked chicken (grilled or roasted is good)
- 1 large stalk celery, cut into 1/4” dice
- 1/2 golden delicious apple, peeled and cut into 1/4” dice
- 1/3 cup toasted walnuts or sliced almonds, roughly chopped
- 2 Tbsp. raisins
- 1/4 cup chopped fresh parsley
- 2 scallions, thinly sliced
- 3/4 cup mayonnaise
- coarse salt to taste (about 1/2 teaspoon)
- freshly ground black pepper to taste (about 1/2 teaspoon)
Stir everything together.
