Chicken Salad












SERVES: 4
  • 2 1/2 cups shredded cooked chicken (grilled or roasted is good)
  • 1 large stalk celery, cut into 1/4” dice
  • 1/2 golden delicious apple, peeled and cut into 1/4” dice
  • 1/3 cup toasted walnuts or sliced almonds, roughly chopped
  • 2 Tbsp. raisins
  • 1/4 cup chopped fresh parsley
  • 2 scallions, thinly sliced
  • 3/4 cup mayonnaise
  • coarse salt to taste (about 1/2 teaspoon)
  • freshly ground black pepper to taste (about 1/2 teaspoon)

Stir everything together.
